Spiced Chicken Thighs

INGREDIENTS
  • 8 Yorkshire Valley Farms organic chicken thighs
  • 1 tbsp cumin powder
  • 1 tbsp coriander powder
  • 1 tbsp Italian dry seasoning mix
  • 1 tsp smoked paprika
  • Salt and pepper, to taste
  • Zest of a large lemon
  • 4 tbsp cooking oil
  • Zest and juice of one medium lemon
METHOD
  1. Rinse the chicken with cold water and gently pat dry it.
  2. In a bowl mix cumin, coriander, Italian seasoning mix, smoked paprika, salt, pepper and zest. Rub the spices and the zest all over the chicken and place on a baking sheet.
  3. Splash the oil on the chicken and bake in 450°F preheated oven for 15 to 20 minutes. Turn the chicken pieces and bake for another 20 minutes.
  4. Remove the chicken from the oven and sprinkle with the remaining zest and lemon juice. Serve with rice.
