INGREDIENTS
- 8 Yorkshire Valley Farms organic chicken thighs
- 1 tbsp cumin powder
- 1 tbsp coriander powder
- 1 tbsp Italian dry seasoning mix
- 1 tsp smoked paprika
- Salt and pepper, to taste
- Zest of a large lemon
- 4 tbsp cooking oil
- Zest and juice of one medium lemon
METHOD
- Rinse the chicken with cold water and gently pat dry it.
- In a bowl mix cumin, coriander, Italian seasoning mix, smoked paprika, salt, pepper and zest. Rub the spices and the zest all over the chicken and place on a baking sheet.
- Splash the oil on the chicken and bake in 450°F preheated oven for 15 to 20 minutes. Turn the chicken pieces and bake for another 20 minutes.
- Remove the chicken from the oven and sprinkle with the remaining zest and lemon juice. Serve with rice.
