Organic Whole Chicken Flattened
Everything we love about a whole chicken, only, well, flatter. We’ve taken all the goodness of our organic whole chicken and removed the backbone, breast bone, and thigh bones to create a flattened chicken offering (also called ‘butterflied’ or ‘spatchcock’). With the reduced thickness, a flattened chicken will cook more quickly. So for those weeknights when you want whole roast chicken but don’t think you have the time, this is your solution. You still get the crowd-pleasing combination of white and dark meat. And you’ll have bones left over for making stocks and soups.
Keep refrigerated or frozen.
When preparing chicken, keep raw poultry separate from other foods. Wash working surfaces (including cutting boards, utensils, and hands) after touching raw poultry.
Cook thoroughly. If cooking whole, a meat thermometer inserted in the inner thigh should read 185ºF (85ºC).
